First, open Preferences and click on the "Import Settings…" button in the General tab.
Verify that the "Import Using:" is set to "MP3 Encoder", and the "Setting:" is "Higher Quality (192 kbps)".
Select one or more songs in your library, then from the Advanced menu, choose "Create MP3 version".
The new version is created. Right-click on the original song and choose "Show in Finder" to see the new version’s file.
